-You can go inside buildings and cops cannont shoot you there but you can shoot them.
-No health above bank (not sure if a bug or not)
-If you go to jail, but you have a bribed cop, you can control the cop while your in jail.
-If you go to jail with a cop army still alive, you will come out of jail with the same number of stars you died with

What buildings can you go in besides the hideout and police station?

Yes, you are able to controll and keep cops since they robber did pay for them.

And if you have a cop army when your robber is killed, your wanted level should be set to 0 unless your bribed cops are issued to attack an enimy. How did this play out when it happend to you?

I was attacking a bank, then a cop came over and killed me while my cops were shooting the cop.
My level stayed at 5 stars and i had 0 kills.
Also you can go into the bank, hospital and abandon structures.
